Beef & Vegetables with Noodles

  1. Heat a large griddle pan or wok with 1 tbsp olive oil and add the onion, garlic and ginger.
  2. Add the beef and mushrooms and season with some salt & pepper.
  3. Cook for 2 – 3 minutes.
  4. Next add the tomatoes, peas, mangetout and stock and cook for a couple of minutes before adding the noodles.
  5. Finally add the noodles and cook for a further 2 minutes until softened.
  6. Serve immediately and garnish with parsley if using.
