Banana pancake recipe

RECIPE OVERVIEW

Gluten Free! This recipe has no flour in it at all, the banana is what creates the texture, mixed with the ground chia seeds. A nice alternative for banana lovers.

Preparation time: 10 minutes

Cooking time: 4 minutes

Ingredients

Serves: 4 people

  • 2 tbsp Chia Bia Milled Seeds
  • 2 large Banana
  • 1 - Banana
    sliced, optional, to serve
  • 2 tbsp Coconut Oil
  • 2 - Fresh Egg
  • 1 tsp Ground Cinnamon
  • 200 ml Milk
  • 1 tbsp SuperValu Goodness Flaked Almonds
    optional, to serve
  • 100 g SuperValu Ground Almonds

Method

  1. Mash the banana in a large bowl until smooth. Stir in the ground almonds, cinnamon and chia. Add the eggs and milk and whisk until you have a thick batter.
  2. Heat the coconut oil on a large non stick pan over a medium heat.
  3. Add 1 tablespoon of batter for each pancake. Wait until the top of the pancake begins to bubble, then flip it over carefully to cook on the other side so both are golden brown. Repeat the process until all the batter is used up.

Serve with toppings of choice.
