A delicious dish – the delicate flavour of the salmon works really well with the fragrant stir-fry.

Preheat the oven to 200ºC/400ºF/Gas Mark 6.
Line a baking dish with a little baking parchment (which will stop the salmon from sticking).
Place the salmon on the baking dish and season lightly with a little salt and pepper. Pour the water on top of the salmon and pop into the preheated oven for approximately 15 minutes Meanwhile slice the pepper, peel and slice the baby potatoes, onion and garlic.
Heat a medium sized frying pan with a little oil and add in the sliced potatoes and cook on a medium heat for a few minutes until they are just beginning to brown on each side.
Next add in the onion, garlic and sliced green pepper. Continue to cook for a few minutes until the vegetables are beginning to soften and then add in the soy sauce.
Mix the potato & pepper mixture thoroughly to ensure that all of the ingredients are coated with a little of the soy sauce.
Ensure that the potatoes are cooked and then divide the mixture between two warmed plates and serve the oven baked salmon on top.
