Cabbage is a great source of vitamins, minerals and fibre, especially when eaten raw. It’s really tasty and satisfying in this simple recipe.

Preparation time: 10 minutes

Cooking time: 10 minutes


Serves: 6 people

  • 2 - Carrots
  • 1 tbsp English Mustard
  • 0.5 head Green Cabbage
  • 1 tbsp Lemon Juice
  • 250 g Mayonnaise
  • 1 - SuperValu Onion
    thinly sliced
  • 1 - SuperValu Salt
    and pepper


  1. Place the cabbage, carrots and onion in a large bowl and toss together.
  2. Combine the mayonnaise, lemon juice and mustard in a separate bowl, then add to vegetables.
  3. Season with salt and pepper, toss gently and serve straight away.

    Tried this tonight. Huge success. Served up a small amount with dinner and stored remainder in the fridge. My first attempt - will make this homemade coleslaw again! Had everything bar the white cabbage at home.
