Baby's Beef & Country Vegetable Casserole

Ingredients

Serves: 4 people

  • 125 ml Beef Stock
  • 150 g SuperValu Beef
    trimmed and finely diced
  • 1 - SuperValu Carrot
    finely diced
  • 0 - SuperValu Leek
    finely diced
  • 1 tbsp SuperValu Olive Oil
  • 0 - SuperValu Onion
    finely diced
  • 1 - SuperValu Potatoes
    finely diced
  • 0 - SuperValu Ripe Vine Tomatoes
    finely diced
  • 0 - SuperValu Swede
    finely diced

Method

(from 4 months)
  1. In a large saucepan heat a little oil.
  2. Add the stewing beef, and fry quickly until coloured or sealed all over.
  3. Add the vegetables into the sealed beef and cook for 3-4 minutes until all the vegetables are sealed and glazed as well as the beef.
  4. Pour in the stock and allow to simmer for 30 minutes.
  5. Puree to desired consistency. Serve immediately.
