RECIPE OVERVIEW

This recipe is delicious as a light meal on its own, or as the perfect (healthy) side with any deal.

Ingredients

Serves: 4 people

  • 1 pinch Black Pepper
  • 100 g Dried Cranberries
    or raisins
  • 5 tbsp Greek Yoghurt
  • 2 tbsp Lemon
    juice
  • 1 pinch Salt
  • 0.5 head SuperValu Cauliflower
    chopped into small bite-sized pieces
  • 100 g SuperValu Goodness Pecan Nuts
    chopped
  • 1 - SuperValu Red Apples
    chopped
  • 1 head SuperValu Romaine Lettuce
    chopped

Method

  1. Whisk together the yogurt and lemon juice in a large bowl.
  2. Add the remaining ingredients to the bowl together to coat evenly in the dressing. Season to taste with salt and pepper.
