RECIPE OVERVIEW

A super-quick paleo lunch salad to
serve two hungry people.

Ingredients

Serves: 2 people

  • 100 g Almonds
  • 1 - Red Onion
    Thinly Sliced
  • 1 - Red Pepper
    Thinly Sliced
  • 15 g SuperValu Fresh Mint
    Torn
  • 1 - SuperValu Mango
    Sliced
  • 60 g SuperValu Rocket Leaves
  • 300 g SuperValu Sweet Chilli & Lime Cooked Chicken Mini
    Chopped into Bite-size pieces
To Serve
  • 1 - SuperValu Lime
    Sliced

Method

  1. Toast the almonds in a dry frying pan on a medium heat for 4 minutes, until golden brown, then roughly chop.

  2. Place the mango slices under a hot grill for 4 minutes, until slightly charred.

  3. Toss the cooked chicken and remaining ingredients with half of the mint in a large salad bowl (use
    the rest of the mint in the dressing). Drizzle over the dressing and serve with a slice of lime.
