RECIPE OVERVIEW

Delicious vegetarian dish that is an ideal starter or lunchtime snack.

Preparation time: 10 minutes

Cooking time: 30 minutes

Ingredients

Serves: 4 people

  • 75 g Brown Rice
  • 1 - Red Pepper
    halved
  • 1 tin SuperValu Chopped Tomatoes
  • 1 clove SuperValu Garlic
  • 10 g SuperValu Mozzarella
  • 1 tbsp SuperValu Olive Oil
    for greasing
  • 10 g SuperValu Pine Nuts
    toasted
  • 1 tsp SuperValu Tomato Purée

Method

  1. Chop the red pepper in half, remove the seeds and fill each half with cooked rice and toasted pine nuts.
  2. Roast the pepper in a preheated oven at 200 degrees C for 10 minutes.
  3. In the meantime chop up the garlic and heat in a saucepan with olive oil.
  4. Add chopped tomatoes to the saucepan and simmer.
  5. Then add the tomato purée to the saucepan.
  6. Remove the red pepper from the oven and cover with tomato sauce and add some mozzarella cheese.

Serve with wedges and salad.
