RECIPE OVERVIEW

You can also bake them. Serve them with salad and/or with an amazing super tasty sour cream, avocado and jalapenos sauce!

Ingredients

Serves: 4 people

  • 2 pinch Black Pepper
  • 1 - Jalapeno
  • 0.5 cup Plain Flour
  • 1 - Red Pepper
    Grilled
  • 2 tbsp SuperValu Chilli Powder
    Can use ginger/cumin/smoked paprika etc.
  • 0.5 cup SuperValu Fresh Breadcrumbs
  • 1 - SuperValu Fresh Dill
    Could also use Parsley
  • 2 tbsp SuperValu Lemon Juice
  • 1 - SuperValu Lime
    For 1 tbsp of zest
  • 2 - SuperValu Potatoes
    Boiled/Baked/Grilled etc.
  • 2 pinch SuperValu Salt
  • 1 bunch SuperValu Scallions
  • 2 - SuperValu Semi Sundried Tomatoes
  • 2 can SuperValu Sweetcorn 326g
    Can also use grilled corn

Method

  1. Put all ingredients except the bread crumbs and the seasoning into a food processor.
  2. Blitz the mixture to your preferred texture. I like to play with the texture and crunchiness (crunchy or crunchy smooth).
  3. When you have the right consistency, put everything in a bowl, add the chunky corn, whole corn kernels, and 2 tbsp of bread crumbs.
  4. Season with salt, pepper and the tex-mex spices (i.e. chilli powder etc.)
  5. Leave the mixture in the fridge for 15 minutes.
  6. Form the patties and coat them with the bread crumbs and flour mix (you can add some smoked paprika or Mexican spices).
  7. In a frying pan, cook the patties over medium heat in vegetable oil until golden brown, about 4 minutes per side.
