A healthy zingy recipe that no one ever realises is low fat! I created this one evening when I fancied something different but had to make do out of what was hanging around my kitchen. Quick to prepare and cook with a great combination of flavours.

Preparation time: 15 minutes

Cooking time: 15 minutes


Serves: 4 people

  • 4 - Chicken Breast
  • 2 cloves Garlic
  • 30 ml Lime Juice
    lemon juice works just as well
  • 1 tsp Olive Oil
    for frying
  • 1 tsp SuperValu Chilli Flakes
  • 4 tbsp SuperValu Fresh Coriander


  1. Tenderise chicken breasts until approx 1 – 1.5 cm thick.
  2. Mix all other ingredients into a paste and spread onto the chicken breasts.
  3. Fry in oil until cooked.

Recommend serving with blanched, then lightly fried asparagus and roasted butternut squash chips.
