If you're looking for all the goodness of a healthy meal but want something a little different, this is ideal. These bell peppers are a great idea for children, too, as they are novel and fun to make as well as being very tasty and satisfying.

Tip: Allow your peppers to cook until they are just becoming soft and brush with a little olive oil to stop them burning at the edges.
