RECIPE OVERVIEW

Ingredients

Serves: 2 people

  • 1 tin Bamboo Shoots
  • 1 tbsp Caster Sugar
  • 2 - Chicken Breast
    Diced
  • 200 g Coconut Milk
  • 1 tbsp Soy Sauce
  • 1 - SuperValu Courgette
    Sliced
  • 1 tsp SuperValu Fresh Basil
    Chopped
  • 1 - SuperValu Lime
    Juice only
  • 1 tbsp Thai Red Curry Paste
To Serve
  • 1 - SuperValu Basmati Rice

Method

  1. Heat the coconut milk in a saucepan over a medium heat and stir in the curry paste. Heat for five minutes, stirring occasionally.
  2. Add the chicken and cook for 7-9 minutes until cooked through.
  3. Add the courgette and cook for 10 minutes. Stir in the soy sauce and sugar until the sugar dissolves.
  4. Add the bamboo shoots and cook for 10 minutes. Stir in the basil and lime juice.
  5. Press the rice into a heart-shaped mould and turn onto a plate. Serve with the warm curry.
