RECIPE OVERVIEW

Serve with creamy garlic mash and steamed green veg. Delicious!

Ingredients

Serves: 4 people

  • 2 sticks Celery
  • 1 - Crushed Chillies
  • 1 - Kallo Vegetable Stock
  • 1 cup Raisins
  • 2 cloves SuperValu Garlic
  • 1 - SuperValu Granny Smith Apples
  • 1 - SuperValu Lamb Shanks
  • 1 tin SuperValu Tinned Tomatoes

Method

  1. Rub pinch of salt and some black pepper into the lamb shanks. Place in roasting tin and place in oven at 200 degrees for approx 30 mins. 
  2. Next chop apple,chillies and raisins and bind together with dash of red wine in food processor. 
  3. Chop onions, garlic and celery, place in pot large enough for lamb shanks to fit snugly,and sweat with some coconut oil for 5-10 mins.
  4. Add some paprika if desired.
  5. Next add the blended mixture, tomatos and vegetable stock.
  6. Once the lamb has roasted for approx 30 mins remove and add to the pot, cook on low heat for further 60-90 minutes. Stirring occasionally.
