Roast chicken wraps 3 ways recipe


If you have leftovers from a Sunday roast chicken, you'll be set for lunches or supers for days afterwards. Check out the SuperValu website for my two other chicken wrap recipes, perfect for kids' school lunchboxes but tasty enough for a packed lunch for the office too. Why not make a different wrap each day to keep things interesting?

Serves: 2 people

  • 0.5 tsp Fajita Spice Mix
  • 4 tbsp Light Mayonnaise
    or 0% fat natural yogurt
  • 1 drop Lime
  • 1 - SuperValu Avocado
  • 1 handfull SuperValu Baby Spinach
    or shredded lettuce
  • 200 g SuperValu Free Range Whole Chicken
    roasted and finely chopped (leftovers)
  • 1 tbsp SuperValu Fresh Coriander
  • 2 - Wholemeal Wrap


  1. Place the mayonnaise, fajita spicy mix and lime juice in a medium-sized bowl and mix together until thoroughly combined. Add the chicken and stir until it's evenly cpated in the mayonnaise. Place a wrap on a cutting board and spread the chicken over it. Scatter over some baby spinach leaves or shredded lettuce, then add the sliced avocado and a few fresh coriander leaves, if using. Roll up tightly and cut in half on the diagonal, then pack into an airtight container or ziplock bag for lunch.
  2. Pack the wrap with fresh fruit, such as a sliced apple, a peeled and segmented clementine, a small banana or a handful of grapes, a yogurt pot for the dairy element of the lunch and a bottle of cold water or unsweetened fruit juice.
