RECIPE OVERVIEW

This is simply the finest recipe loved by thousands of people who tried the pizza. Any fillings can be used, but chicken & sweetcorn define the dish as high in protein & vegetables. Loved by all.

Ingredients

Serves: 4 people

Brown Bread Pastry Base
  • 1 - Fresh Egg
    beaten
  • 2 cups Odlums Cream Plain Flour
  • 1 handfull SuperValu Dried Mixed Herbs
    optional
  • 1 tbsp SuperValu Sunflower Oil
  • 2 cups SuperValu Wholemeal Flour
Filling
  • 2 handfull Cheddar Cheese
    grated
  • 2 - Chicken Breast
    diced
  • 1 large Onion
    finely chopped
  • 2 handfull SuperValu Grated Mozzarella Cheese
  • 4 - Tomatoes
Seasoning
  • 1 tbsp Aromat Seasoning
  • 1 pinch Black Pepper
  • 1 handfull SuperValu Fresh Parsley Flat Leaf
    chopped (to garnish)
  • 1 pinch SuperValu Salt

Method

Prepare brown pastry base:

  1. Sieve white flour, add brown flour & a little mixed herbs (optional).
  2. Add a little sunflower oil & beaten egg, to bind to a stiff dough.
  3. Cool in fridge, while slicing the tomatoes & dicing the chicken.
  4. Grease large baking tray with sunflower oil. Sprinkle with a small handful of brown flour & Oatmeal mixed, this prevents the pizza base sticking to tray.
  5. Roll out brown bread pizza base, 1cm in thickness, cover tin base & 2 cm up the sides of baking tin.
  6. Place sliced tomatoes on pastry base, line across.
  7. Season & add diced chicken & sweetcorn & chopped onion, a little cajun seasoning (optional)
  8. Sprinkle mozzarella & cheddar cheese on top.
  9. Bake for 30 minutes approx., fan ovens tend to be quicker than conventional ovens.
  10. Remove from oven , sprinkle with chopped fresh parsley.

Delicious hot or cold, Ideal for lunch box, lunch, or dinner.
Can be used as a healthy recipe for exam Students.
