This recipe is a great one pot job. It has plenty of protein from the Quorn & beans. It is low in fat & tastes great served with cous cous or rice. My kids love this & the ingredients can be switched around to suit what's in the cupboard, you could throw a few carrots in or change the type of beans.

Preparation time: 15 minutes

Cooking time: 45 minutes


Serves: 4 people


  1. Cut peppers & onion into decent sized chunks (to allow a bit of bite once cooked). 
  2. Heat pan with spray oil, add the chilli & garlic paste, cook for a minute, then add onions & peppers. Cook for a few mins till slightly softened. Add cumin, paprika & cinnamon & cook on for another 2 mins.
  3. Add rest of ingredients - Quorn, passata, tomatoes, beans, chick peas & a tin full of cold water. Bring back to the boil & then simmer for approx 20 minutes.

Great with cous cous - either plain or flavoured. If making plain use veg stock while cooking to add taste easily.
