Hi Martina, Great Question! Scones seem very easy but can be tricky enough! In baking, we have to make sure that all the measurements are spot on as it is a science but as well as that, the technique in which you bring all your ingredients together is key. Once you've weighed and mixed all your dry ingredients together, add in your wet ingredients and loosely bringing them together with a wide 'claw' to make sure you get as much air into the mixture. Once it has come together, turn it out onto a lightly floured surface and cut into your preferred shape but make sure they are all quite similar in size and thickness so they all cook at the same pace.
