This chicken recipe is simple, delicious and high in protein
Serves: 2 people
1 pinch Black Pepper
1 - Lemon
1 tbsp Olive Oil
1 pinch Salt
2 sprigs SuperValu Fresh Parsley Flat Leaf
1 pinch SuperValu Oregano
2 - SuperValu Part Boned Chicken Breast
2 medium SuperValu Potatoes
peeled and diced
- First, cook the potatoes. Bring a pot of water to the boil and add the potatoes. Cook for about 10 minutes or until the potatoes are tender and cooked through. Drain and set aside.
- Place the chicken in a bowl or baking dish and pour over half the lemon juice, then season with salt.
- Heat the oil in a small frying pan set over a medium-low heat, then add the chicken. As you sauté the chicken, add the remaining lemon juice along with a pinch of oregano and some freshly ground black pepper. Cook for 5 to 10 minutes on each side, until the chicken is completely cooked through. Garnish with parsley and serve with the potatoes.
