Banana oat bake recipe

RECIPE OVERVIEW

Serve this banana oat bake with yoghurt, nut butter and mixed fruit for a delicious, guilt free breakfast. 

Preparation time: 10 minutes

Cooking time: 25 minutes

Ingredients

Serves: 4 people

  • 1 - Banana
    chopped
  • 1 tbsp Butter
    melted, or melted coconut oil
  • 3 tbsp Fresh Blueberries
    (optional)
  • 2 tsp Ground Cinnamon
  • 1 tbsp Honey
  • 200 g Jumbo Oats
  • 400 ml Milk
    or almond milk
  • 1 pinch Salt
  • 3 tbsp SuperValu Goodness Flaked Almonds
  • 1 tsp Vanilla Extract
To Serve
  • 1 bunch Mixed Berries
  • 2 tbsp Natural Yogurt
  • 2 tbsp Peanut Butter
    or any nut butter

Method

  1. Preheat the oven to 200oC/gas mark 6.
  2. Place the oats, milk, butter/coconut oil, honey, vanilla and a pinch of salt in a mixing bowl and stir well to combine. Transfer to a glass baking dish and sprinkle the cinnamon on top, then scatter over the chopped banana. Finish with the flaked almonds and blueberries, if using. 
  3. Bake in the oven for 25 minutes, until nicely browned. Top with mixed berries, nut butter or natural yogurt.
