Overnight oats recipe


This is easy to prepare on a Sunday evening ahead of a busy week.  Once made, it's just a case of grabbing it from the fridge and enjoying.

Cooking time: 0 minutes


Serves: 5 people

  • 2 tbsp Desiccated Coconut
  • 2 tbsp Hemp Seeds
    or milled linseeds
  • 1 - Lemon
    juice only
  • 200 g Porridge Oats
  • 3 tbsp SuperValu Dried Fruit
  • 1 tbsp SuperValu Goodness Pumpkin Seeds
  • 2 tbsp Supervalu Goodness Chia Seeds
  • 500 ml Unsweetened Coconut Milk
To serve
  • 1 handfull Mixed Berries
    or any fresh fruit
  • 1 portion Natural Yogurt
  • 1 handfull SuperValu Goodness Mixed Nuts


1. Mix all the ingredients together in a large bowl. Cover with cling film and refrigerate overnight.

2. In the morning, transfer the oats to individual bowls and top with fresh fruit, crunchy nuts or any other superfood you have on hand. My favourites are fresh berries, sliced bananas and a dollop of yogurt.

    Used ordinary low-fat milk as had no coconut milk handy, & consequently left out the lemon. Had it hot. Yummy. Will try it with coconut milk cold next time. Easy & a nice twist on old-fashioned porridge.
