Ingredients
30mlEgg Whites
50mlGin
White Wave Gin
25mlLemon Juice
Raspberry syrup
180mlHot Water
170gRaspberries
150gSugar
Method
In a shaker, add all the ingredients and shake without ice for 15 seconds.
Add ice and shake for another 15-20 seconds. Strain into a coupe glass and garnish with some fresh berries.
To make your own raspberry syrup (15mls)
In a small saucepan, combine sugar and water. Stir over heat until sugar is completely dissolved.
In a medium jar, lightly crush raspberries. Pour some syrup over the raspberries in a jar. Seal and steep in the fridge for up to 24 hours. Strain syrup with a fine mesh strainer once steeping is complete.
