Method
Preheat oven to 200C.
Place the chicken in an oven proof baking dish.
Mix the mustard, lemon juice, garlic, oil, and the thyme in a bowl. Cover the chicken with this mixture.
Place foil over the chicken and place in the oven. Cook for 20 - 30 minutes until cooked through.
In a pot of boiling water, place potatoes and simmer until cooked.
Drain the water, add milk and sour cream and mash. Add chopped spring onion and pepper.
Steam the broccoli.
