Sarah's Lemon and Blueberry Buns

Ingredients

  • 1 tsp Baking Powder
  • 90 g Butter at room tempature
  • 110 g Caster Sugar
  • 2 - Eggs
  • 1 pinch Icing Powder to garnish
  • 1 zest Lemon
  • 1 - Lemon juice from
  • 120 ml Milk
  • 1 tsp Salt
  • 100 g SuperValu Blueberries
  • 190 g SuperValu Plain Flour
  • 1 tsp Vanilla Extract

Method

  1. Pre-heat oven 180°C/160°C fan/Gas 4.
  2. Line a bun tray with cases.
  3. Make the batter by whisking the flour, baking powder and salt in a large bowl and set aside.
  4. Beat the butter, sugar and lemon zest together with a handheld or kitchen mixer for 2 minutes, then add the eggs, one at a time, mixing in-between.
  5. Pour in the vanilla extract and beat on medium speed until all ingredients are combined.
  6. Add the dry ingredients and beat again until combined. Pour in the milk and lemon juice and beat before folding in the blueberries.
  7. Spoon around one heaped tablespoon of mix into each case and bake for 18-20 minutes.
  8. To finish, dust with a little icing powder.
