Method
Chop the onion and garlic and add to a large ziplock bag with the soy sauce, vinegar, oil, and bay leaves. Add the chicken wings and leave to marinate overnight.
Preheat the oven to 220C. Line a baking tray with tin foil and place a wire rack on top. Remove extra marinade from the chicken wings with a paper towel and place them evenly on the wire rack. Cook in the oven until crispy and read 75 degrees at their centre.
Place the remainder of the marinade in a pot, bring it to a boil and reduce for 15 minutes. Strain the mixture.
In a blender, add the yogurt, mayo, blue cheese, mustard, and dill, and blitz.
Coat the chicken wings in the marinade. Plate up and garnish with chopped coriander, sliced chillis and scallions. Serve family style in the middle of the table with ranch dressing on the side and tuck in.
