Place the Harry’s nut butter, garlic, soy sauce, sesame oil, ginger and lime juice and zest in a bowl and combine until smooth.
Add the chicken and marinate for 20 minutes minimum.
Tread on skewers.
Preheat a griddle pan or barbecue to medium heat.
In a bowl, combine the cucumber, spring onions, coriander, lime zest and a drizzle of oil. Place on a plate.
Cook the chicken skewer for 3-5 minutes each side or until lightly charred and cooked through.
Serve the chicken skewer over a bed of salad leaves and spoons of cucumber salsa.
