The lemon and herb marinade is the perfect compliment to the chops - this gluten free dish is a total crowd pleaser.

100gButter
3clovesGarlic
chopped
1 - Lemon
juice and zest
4 - Lollipop Pork Chops
1pinchSalt
1bunchSuperValu Fresh Coriander

Method
Preheat the barbecue to a medium heat.
Melt the butter in a small saucepan set over a medium heat. Stir in the lemon juice and zest, garlic and thyme. Cook until the garlic has softened, about 1 minute. Remove from the heat.
Lay the pork chops on a plate, coat both sides with some of the butter and season with salt and pepper. Grill the pork chops over a medium heat on the barbecue with the lid on. Turn the meat after 3 to 4 minutes to caramelise it. Cook for 10 to 15 minutes more, brushing occasionally with the remaining garlic and lemon butter, until cooked through.
Serve immediately with a last brush of butter and garnish with fresh coriander.
