A simple and easy broccoli & potato soup. What a fabulous combination!

Ingredients
1headBroccoli
cut into florets
2tbspRapeseed Oil
100mlSuperValu Cream
2sprigSuperValu Fresh Thyme
1clovesSuperValu Garlic
finely chopped
1 - SuperValu Onion
finely diced
1 - SuperValu Potatoes
peeled & chopped
0 - SuperValu Salt
400mlVegetable Stock
(or chicken stock)
Method
Heat the oil in a saucepan over a medium heat and add the onion, garlic, potato and thyme and some seasoning. Cook for 4 – 5 minutes, until the onion is translucent.
Pour in the stock and broccoli and bring to the boil, then reduce the heat and allow to simmer for 10 -15 minutes.
Once reduced pour in the cream, add further seasoning if required. Using a hand blender blitz until a smooth consistency is achieved.
Serve immediately with a further dash of cream or crème fraiche if desired.
