Pork and Vegetable Noodle Stir Fry

The beauty of this dish is that it is very quick and easy to prepare and will be on your plate within minutes!

550 g SuperValu Irish Pork Loin Chops
1 SuperValu Carrot cut into match stick sized pieces
1 SuperValu Onion
1 SuperValu Yellow Pepper sliced into strips
300 g SuperValu fresh Noodles
From your Store Cupboard
1 tbsp SuperValu Olive Oil
3 tbsp SuperValu Cooks Ingredients Soy Sauce
SuperValu Cooks Ingredients Salt and Pepper
  1. Cut the chops into thin strips.
  2. Heat a large wok or sauté pan with the oil and add in the sliced pork.
  3. Cook quickly for 2-3 minutes until the pork is lightly browned. Season lightly at this stage.
  4. Add in the vegetables and cook very quickly for a further 3-4 minutes until they have softened down.
  5. If you are nervous of the stir fry burning add in a couple of tablespoons of water.
  6. Add in the oyster or soy sauce at this stage and mix well until fully coated.
  7. Add the noodles to the wok and mix well with the pork and vegetables.
  8. Season lightly and ensure that they are sufficiently heated before serving.
  9. Serve the pork stir-fry and noodles on individual plates or large platter for sharing.

    We have made this dish twice now and it is becoming a family favorite. Quick and easy to make when we get in from school. We made it first with oyster sauce but prefer it made with soy sauce. Kevin’s dishes are now being made in our house on a daily basis.
