Ingredients

  • 2 - Bay Leaves
  • 3 - Carrots peeled and chopped
  • 2 sticks Celery trimmed and chopped
  • 2 litre Chicken Stock Cube
  • 150 g Rice Noodles
  • 370 g SuperValu Fresh Chicken Fillets
  • 1 tbsp SuperValu Fresh Chives snipped to serve
  • 1 tbsp SuperValu Fresh Parsley Flat Leaf chopped
  • 1 bunch SuperValu Fresh Thyme
  • 1 large SuperValu Leek trimmed and sliced
  • 1 tub SuperValu Salt
  • 1 tsp SuperValu Whole Black Peppercorns

Method

  1. Warm the chicken stock in a pan and add the carrots, celery, leek and onions.
  2. Make a bouquet garni with the bay leaves and the thyme by tying the herbs together with a little kitchen string. Add the bouquet garni to the stock along with the peppercorns and salt.
  3. Cover the pan with a lid and bring to the boil, then reduce the heat. Simmer for about two hours, skimming off any scum that rises to the surface of the liquid from time to time.
  4. Set aside to cool slightly, then strain the stock into a smaller pan. Add the diced chicken and return to a gentle heat for approx 6 minutes then add the noodles. Cook for a further few minutes until the noodles have softened, then stir in the chopped parsley.Season as necessary.
  5. Ladle the chicken broth and noodles into serving bowls and sprinkle with the chopped chives. Serve immediately
