Broccoli & Potato Soup Broccoli & Potato Soup

A simple and easy broccoli & potato soup. What a fabulous combination!

Ingredients

  • 1 head Broccoli cut into florets
  • 2 tbsp Rapeseed Oil
  • 100 ml SuperValu Cream
  • 2 sprig SuperValu Fresh Thyme
  • 1 cloves SuperValu Garlic finely chopped
  • 1 - SuperValu Onion finely diced
  • 1 - SuperValu Potatoes peeled & chopped
  • 0 - SuperValu Salt
  • 400 ml Vegetable Stock (or chicken stock)

Method

  1. Heat the oil in a saucepan over a medium heat and add the onion, garlic, potato and thyme and some seasoning. Cook for 4 – 5 minutes, until the onion is translucent.
  2. Pour in the stock and broccoli and bring to the boil, then reduce the heat and allow to simmer for 10 -15 minutes.
  3. Once reduced pour in the cream, add further seasoning if required. Using a hand blender blitz until a smooth consistency is achieved.
  4. Serve immediately with a further dash of cream or crème fraiche if desired.
