Goose-fat Roasted Potatoes

Don’t be put off by the cooking time.
Once it’s in the oven, you don’t need to do a thing.


Serves 4-6
Cooking Time 2 hours

Ingredients:

  • 600g SuperValu potatoes, peeled and halved (I find maris pipers very good for roasting)
  • 150g goose fat

To Cook:

  1. Pop the potatoes in a large saucepan of boiling water for 10 minutes and then drain.
  2. While the potatoes are cooking pour the goose fat on to a roasting tin and place in a pre-heated oven at 200°C until hot.
  3. Add the potatoes to the goose fat using a spoon and return to the oven for 30 minutes.  Turn the potatoes every 10 minutes.
