Clodagh McKenna’s Homemade Muesli

Serves 12
Preparation time: 5 minutes
Cooking time: 15 minutes

Ingredients:

  • 300g jumbo oats
  • 180g mixed nuts (almonds, hazelnuts, walnuts)
  • 100g dried figs
  • 100g dried apricots
  • 70g dried cranberries
  • 50g pumpkin seeds
  • 50g sunflower seeds

To Cook:

  1. Spread the jumbo oats out on a large roasting tin and place in a preheated oven at 190˚C for 15 minutes or until golden.
  2. Then tip into a large bowl and allow to cool.
  3. Roughly chop the dried fruits and nuts and add into the bowl, with the seeds. Mix well.
  4. Transfer to an airtight container and serve for breakfast with some natural yoghurt or milk.
